Our beer program at the Noble Pig was designed specifically for our space and our needs. Our space is quite limited for what we produce so we have been extremely creative with how we store and produce our craft beer.
For starters, our Mash Tun is also our Kettle. This way we only have two large stainless steel vessels for the first part of brewing instead of the usual three. This unique design can be seen in our main floor through the glass windows on the pub side and is called the Brewhouse. This room also contains the Lauter Tun which is the second big tank you will see.
Downstairs in our cold room we have our conditioning tanks and attached to the cold room are our fermenters located in the fermentation room. This is where the last stages of brewing take place. The majority of our beer is served out of the conditioning tanks. This space is around 1500 square feet and a beer lovers dream. Some of our tanks will sit for up to 5 months conditioning while others may only take 3 weeks. This makes the cold room a busy place and means our brewer Trevor Zechel is always changing tanks.
Trevor Zechel joined our team as an apprentice brewer in February 2016 and became our head brewer in May 2016. Trevor is a graduate of the inaugural brewing class of Kwantlen Polytechnic University. Trevor was previously a paramedic having worked 22 years for the BC Ambulance service.
Trevor left this all to pursue his brewing passion. He enjoys the mix of art and science in crafting delicious beer. He has some great ideas on upcoming seasonal beers so check our facebook page regularly.
We have produced over 35 different styles of beers since opening and consistently feature six noble brews year round. And we’ve always got a rotating seasonal beer on tap.
Seasonal beers never last long as there is usually less than one thousand liters brewed and you never know what Trevor will come up with next as we continue to expand on the styles we produce.
If you are looking to try something that is even more limited, we feature cask nights where Trevor creates a forty liter cask containing unique and inspired ingredients. Casks usually sell out in a matter of a few hours and will be advertised when they are ready. We will also share what time we will tap the keg.
Please feel free to ask your server if tours are available when you dine with us. We love to show our guests what we do if the brewery is not in a production day. On those days we are not able to conduct tours. This is why we had the brewing process painted on the wall in our pub. It describes the process in detail and is a great photo opportunity to keep a memento from you experience at The Noble Pig Brewhouse.
